Am I allowed to choose any class I want in a College/University? Let's say I wanted only science-based courses even though I had an A in Chemistry and C in Biology. I need a majority of my classes to be science-based.

You have certain lower division requisites to fulfill. Social science, humanities and the like. Most can be gotten over quickly and some have HS carry over.

Most of you classes will be science ( don't forget the math! ) but I am troubled by that C in my area of interest. There is one science and that is biology and there is one biology and that is evolutionary biology!

Calculus will be no problem, I'm currently doing fine in AB, in which I assume I'll take BC once I enter a college/university.

But I'm concerned about one last thing: will my professors reject me from going into their science classes because of that C in Biology? I sincerely hope not because I only got that C because of that year being very stressful of me, encountering alot of problems. I hope they don't look at that grade. That's truly not my best work, I can do MUCH better.

No, they can't reject you on that basis! You will need college chemistry 101A to take college biology and bio is predicated on that, not HS work. That is one thing that transfers from HS to college well, math.
