I think its because of the potato blight that ravaged Europe in the 1840's.The Irish were so dependent upon potatoes that it affected them more than the rest of Europe, and thus when we learned about it, the rest of Europe was mentioned, but the emphasis was on the deaths in Ireland.

Good question. I don't know why it's the Irish! I would think Germans, Poles, and Ukrainians would be more associated with potatoes . When I think of the Irish, I think more about Irish whiskey and fist fighting ! LOL

I agree. I mean the Germans have invented hundreds of different dishes using mostly the potato. The Irish don't the potato nearly as much as those Germanic Euros!

Why don't we associate potatoes with America more? The first potato in America was planted in Derry, New Hampshire

I think it has to do with the Great Famine also known as the Irish Potato  Famine. It was the only thing many people in Ireland lived off of from 1845 to 1852.

Surely you've heard about "the great potato famine."

I'm well aware of the famine but potatoes also had an important role in Germany. Potatoes are one of the reasons the population in Germany skyrocketed.
