Trying to decide between getting a degree in education, agronomy or psychology. I'm aware none of them have any relation but they all really interest me. Just trying to find something likeable with a demanding field?

Psychology majors are a dime a dozen. Go to any college and they make up the bulk of the student body. Interesting subject, little to no math, perfect for the typical person who has no idea what to do with their life! So you can imagine what the field is like. Unless you're dead set on it and willing to pursue graduate studies. I'd skip it.

There are 2,000 agronomists in California. Other states only have 100-200. I personally wouldn't consider it "in-demand".

Education. As for teaching jobs, the only easy ones to get are at districts where no one wants to be. The best teaching gigs are post-secondary teaching jobs and those require an advanced degree in the particular subject you're teaching.  K-12 teachers have it real hard these days unless you have tenure.

My advice is, if you're undecided go do something else for awhile until you're actually dead set on something. Because all the ones you're interested in carries a tedious journey.
